I want to use puff pastry dough to make small cheese tarts. How do i do it? What type of cheese, etc?

I am not trying to make something mini-quiche-ish. I want to take disks of puff pastries and top them with a cheese or cheese mixture and bake them in the oven for appetizers for a party. Does anyone have a good recipe that meets those requirements?
